Melty Cheesy Toastie, W Beans & Pickle

Boo ya. This is like crack toastie! Whichever your favourite melty cheese, I love provolone or Fontina if I’m being fancy. Cheddar and Mozza works amazingly too. Mix it up, just use what you’ve got floating around in fridge!

  • Brown bread slices (GF are great here with all those lovely seeds too), both sides buttered (use extra virgin olive oil if you’re doing more of an Italian or French style filling ie: olives, artichokes, tomatoes & herbs)

  • Grate the cheese, sprinkle it over one side, some epic pickles such as Mc Clures work great here, sliced and layered

  • Beans! What?! Get creative, you can do good ole dirty baked beans in a tin, or get fancy with some black beans and queso/feta/sour cream as your filling with a corn relish or corn & pico di gallo salsa on the side. White beans, fat juicy creamy ones, with some mustard, and melted gruyere, now you’re talking. Plus its extra fibre and protein and all those good things.

  • Top with beans, the other piece of bread, and on a medium low heat, non stick pan, toast for 3 minutes. Flip, press down with a flat dinner plate or similar and a weight. This trick really helps seal the deal.

  • 3 minutes later its done. Sauce of choice: mango chutney, ketchup, aioli, or… to be healthy, as a above a fresh tomato salad w loads of basil and olive oil.
