Fast Caramelized Onion Cacio e Pepe Pasta, w Sage Almond & Lemon

Who likes the idea of plant based Monday's? Me! So give this a whirl. Easy whatever-pasta with caramelized onions, lemon sage and almonds.

Pantry Items

  • 1kg mixed onions (leeks, shallots, spring onion, brown onion, baby onion) or 2 large brown, sliced and diced

  • 3 clove garlic, sliced

  • Nice lug lovely extra virgin olive oil

  • Some aromatics (sprigs or rosemary, thyme or bay or excellent)

  • 2 tsp fresh ground black pepper

  • 1 sliced red chilli (optional)

  • 2 tbsp butter

  • 2 tbsp grated pecorino or parmesan (or tasty cheddar if you don’t have those

    Garnish

  • Fresh sage leaves

  • Whole or sliced almonds

  • 1 lemon, zested/juiced

Bring a large pot to a boil, covered.

Meanwhile, in a heavy based saute pan/pot, heat to medium, add the olive oil, add all the onions, garlic & herbs season. Cook covered, over a medium heat, stirring every 5 minutes or so. This will take a approx 20min.

I like to fry sage in a little olive oil & butter, along with the almonds, they will crisp up and the butter will turn nutty. This is great poured over the pasta. Finish with lemon zest and juice over the whole lot.

Cook pasta according to packet instructions. You want al dente, and you want to finish the cooking, off in the pan of lovely onions, with some of the pasta water, the grated pecorino, butter & all that glorious black pepper. The sauce will be all kinds of epic.
