Part 3. Nude Food / Naked Food

Mid week Madness? Calm the farm, and enjoy the remainder of summer warmth - windy or not! 

Whilst reading up on naked cooking, Sam Sifton's New York Times weekly post, was rather, amusing. Avoiding skin contact with bubbling tomato passata, fried fish or that weekly bacon fry up, is essential. How many of you cook in the nude? Nude Food. It talks about the benefits of the nudist movement, healthy eating and living. Balanced meals, a majority of vegetables and high quality protein. Stripping back those layers to reveal the pure, simple form of real food, and equally, our bodies, was rather enlightening. Have a read, let me know what you think!! 

The above, relates to a wee health scare in my family recently. It scared the shit out of me, and I am sure the rest of my family too. However with age and maturity, those bastard health issues sneak thru the gaps. Screw them, I thought.. however, I'm a butter loving farmer's son, although fresh dairy ie burrata, ice cream, mascarpone, cream, mozzarella... gives me, literally the sh$!ts! Its something I work with and enjoy to snack on - in moderation. Although I allow only a little dairy, mainly aged cheese like parm, Gruyere / Beaufort (if I’m lucky enough to be in Europe - I was once a spoilt travelling private chef!) as well as newly reintroduced pot set/pure full fat greek yoghurt. To help build my gut health/flora. Again, something I'm learning about. 

Anyway, here are some clever little recipes. Recipes like grilled fish, with a light broth, some Vermicelli, fish sauce and whatever veggies on hand. I’m a huge fan of roast chicken, which I made earlier this week when house sitting in Byron Bay. The frames were the base of the broth for dinner one. Simmered in water for 30minutes, seasoned with fish sauce, soy, lime, and aromatics on hand like garlic ginger chilli and curry leaf. Recipe link here. 

Grilled Fish, Broth, Vietnamese Flavours, Noodles

Broccoli, Miso, Chilli, Lemon, Legumes, Herbs (great with lamb and fish)

Stir Fried Fresh Calamari with Chilli, Dill & Turmeric, loaded with pepper, fish sauce, lime, tomato, garlic, greens and nuts

Oven Roast Chicken Parmigiana. Or as an alternative, try with passata, pangrattato/crumbs/nuts/seeds vegan? Try w eggplant/zucchini or squash
